I've ben looking at oven options, too. The Force10 2 burner with
oven, on gimbles, looks really nice. Unfortunately it would require
radical modifications to the galley woodwork, and might not swing
enough even then ... not to mention the $1500 cost.
I like having a gimbled stove top as we quite often heat soup or boil
a kettle while underway. I'm not sure we'd use the oven underway, as
we don't go offshore.
Looking at alternatives I found a Coleman stove top folding oven that
looks interesting.

Has anyone had experience with this unit?

Now that looks really interesting! The price is right, and it appears
to be made of stainless steel. More research needed on this one.
I see that propane bottles are now being made from composite
materials. No more rusty steel bottles on the aft deck!
