How difficult is it to replace the halyard on a furling jib on a Catalina 30?

If its a rope halyard just butt two ends together(old and new) and use a needle and fishing line to hold them together. Then pull the old out while the new goes in. I've replaced all my halyards this way.

That depends on what type of furler you have. Some have "internal halyards" that are part of the furler while others have a swivel that the boat's jib halyard connects to.

This is an easy thing, even if the existing line is in the furler. If you use a painter of sufficient length, you butt the painter and halyard ends together, attach, and pull (carefully) the new painter through, with the old halyard.
Then you remove the old halyard, attach the new one, and use the painter to pull the new halyard through.
The hardest part is probably paying attention to the joint between the painter and the halyards.
