Nonsuches are great boats. Well built and roomy. They have a modern underbody and along with the huge sail, they perform quite well and are quite solid and stiff. They have a halyard to raise the sail, a sheet to trim it and a choker to flatten or loosen the foot achieving a similar effect as an outhaul. All done from the cockpit. The Ultra was a variation on the original boat and so has some additional niceties to it. These boats are a dream to work on because their lockers are huge and you can get into places to work on them. Mark Ellis did a great job designing them and they were well built by George Hinterhoeler in Canada. The original boats had a spun aluminum mast, but I believe later generations, before they went under (fire in the factory), they used carbon fibre masts. You won't go wrong. They built Nonsuches in many sizes: 22, 26, 30, 33 and 36, I believe. All with quality workmanship and I never heard a Nonsuch owner complain about the product.
