I updated my 1990 Catalina 30 Mark II last week in a way that has me absolutely thrilled with the results.
I found a company called Crusing Concepts; they make all sorts of products for sailboats, including companionway doors.
The doors I bought are teak; there are frosted plexiglas windows, which slide up and out, leaving behind screens. Last night my girlfriend and I spent the night on the boat, a nice breeze going through the boat from the front hatch to the screen doors.
If you're thinking about getting rid of the boards, you'd love these doors, and the construction was first-class. He included a drill bit and a square drill bit for installation, along with wood blocks for the hinges (the doors are on hinges that allow easy removal) and hasp. Highly recommended!
