Fire Extinguishers
I had to go through the same thinking process when I got my H260 a year ago.  It looks like you have already done some good thinking about this. You have already identified the most likely places for a fire to occur. The key is to mount the extinguishers where you can reach them quickly, but not where a fire will cut off your access to them. I mounted one, as you suggested, on the port side wall going down the steps.  This gives quick access by simply turning around in case of a galley fire and is also fairly easy to get to in case of a fire at the transom.Like in many sailboats, escape from the quarter berth under the cockpit in the H260 requires the occupant to get past the galley, so I felt the need to have an extinguisher within easy reach from the sleeping area in case of a galley fire. I mounted the second extinguisher on the outside of the galley enclosure, on the curved surface facing aft into the quarter berth.Though not required by the Coast Guard for the H260, I have been considering mounting a third extinguisher somewhere in the cockpit, where it will not interfere with people moving about the cockpit, but will still be easily reached. This "extra" extinguisher could be an ABC type, since the ones Hunter supplies with the new boat are BC type extinguishers.
