 I have a 2007 Hunter 41DS and I'm trying to replace the remote mic cable from the Nav station to the helm.
How in the world do you get to the cable once it runs behind the aft head and aft state room? How do you get the soft leather ceiling panels off? Are they Velcro on? I really don't want to tear the whole boat apart. Maybe I should hire someone for this job. Any ideas of the cost?

Do you need to remove old cable? I've factory fitted Icom cable from nav to pedestal. When I changed to Std Horizon, instead pulling out the stock cable (which I impossible without cutting the socket off) I just connect the SH extension cable 8pin side to the Icom 8pin socket and coil the hold bundle inside the Instrument Pod and mount the SH socket where Remote Mic connect to is then mounted in place where Icom socket was. No pulling cables! :)
Hope its same yours.

I found pulling out the old cable to pull a new one would be next to impossible since there's too many cable ties in hard to reach places and the connector is too big to pull easily.

What I stumble upon is that the new ICOM mic cable plugs into the mic end of the old and cable. So now I have 24 feet or so of cable coiled in the pedestal below my compass and never had to cut, splice or pull any wires. I just hope this doesn't negatively affect my compass.

I also learned that if I had to pull some cables from the nav station I could do this by accessing the starboard stern bottom locker in the sugar scoop.

I still don't know how to remove the leather panels in the ceiling if I ever have to in the future.

I ran cables for a bow thruster all the way from the forward cabin to the Helm without removing any of the headliner. From the Nav Station run the cables down under the removable panel on the bulkhead under the Nav Station, then thru the underfloor compartment. Continue to run the cables under the floor and then under the aft bed. In the center under the aft bed there is an opening under the aft bulkhead to run the wires up to the Helm. The hard part is getting the wires thru the stainless steel tubing at the helm, a very tight fit.

PM me if you want to discuss.
