I am replacing knot/depth meter and one transduceer hole is smaller than the new one and one is larger. The one hole is 1/8" too large. Anyone had experience with this. Have you used a sleeve, filled with sealant, added epoxy, inserted filler strip or shims and sealant?

1/8" TOTAL extra diameter as in 1/16th all around?

If it's only a 1/16th gap around the new transducer good quality sealant should be sufficient, but if you have 1/8" all around I would not trust that large a gap to sealant alone. I would patch the old hole completely with Glass cloth and West System epoxy and drill a new hole for the transducer in a different location rather than weakining your repair with a hole in the same location. Just an opinion...
