Mainsheet and Halyards run aft

There are 2 things I am wondering about doing that I think would be an improvement on the H 18.5. I am asking if anyone has done either of these and some ideas or problems that this could cause. One is running the Halyards aft so that the head and main sails can be raised and lowered without going forward. The boat only has one winch which is mounted on the mast, I was thinking of using deck organizes and moving the winch to the top of the cabin and using rope clutches for the Halyards. Not sure of any and all problems this could cause. The other idea is to move the mainsheet out of the center of the cockpit. I was thinking of a system that is anchored at the transom on either side and uses one cleat to hold the sheet trimmed. I have seen other brand boats with this type of rigging but don't know how it will actully function and especially on a boat that was designed diffently from the factory.

I have a 185 that has been modified exactly as you describe, not by me but by the previous owner, and everything works like a charm. Next time I go out I will take the camera and send you some pictures.
