Is it possible to heal a H25 too much and capsize?

I have a 1977 Cherubini Hunter 25 - full fixed keel. Is it possible to heel too much and take on water and sink/capsize? Is the boat self righting? We caught some serious wind gusts on Lake Dillon and heeled a lot (we are kinda new at this though) so I used the rule "When in doubt sheet out" - let go of the Jib sheet!

You've got the right idea, but tending the mainsheet in high or gusty winds might be a better strategy to prevent excessive heeling. Maybe it depends on the boat, but that's what I've learned. Unless you encounter waves twice the freeboard there is little chance of a capsize.
