I have some de-lamination on some of the cabinets... I found an iron-on red oak laminate through Lowes.com... has anyone used iron on laminate?

I would not use iron on laminate (veneer?) in a marine environment.Even contact cement can let go in extreme heat.Don't ask how I know!
Remove the existing veneer, use a waterproof glue to glue the new material.
Clamp or brace with a backing plate.

I've had no problem using using iron on edging laminate in our boat for a couple of small repairs.

I use it occasionally in my hobby cabinet making and MOST DEFINITELY there is variation in quality with different laminates. This shows up in the different type of hot glues used.

I'd suggest looking for a woodworking specialty store rather than using a big box store.

If you're not able to get a good quality laminate, as suggested, use a waterproof glue.
