Once I start the engine the instrument windows (RPM, Fuel, Volts) on the pedestal steam up on. Is this common? Do I need to be concerned and address? If so how?

What you are seeing is a common issue from what I hear--what's happening is that the lights in the instruments (on whenever the key is on) heat them up and if the humidity is high it will condense the moist air inside the instrument pod onto the gauge lenses. To remedy this some have drilled one or two vent holes in the bottom of the housing so that it can get some fresh air. I've not done this myself because in my climate (Southern Calif) this doesn't happen too often. The down-side to the vent holes is that it can let water in the instrument pod if water is splashed off of the floor and reaches the pod.
