Does anyone have an idea who may have been modifying these boats out of the factory?

I've been told that there were no 25s with factory inboard engines in them, however mine seems as if it was done at the factory. The propeller is coming out of the skeg well formed, there is a control in the cockpit which seems factory with key start and a fuel tank all apportioned seemingly without aftermarket installations. Curious to find who may have done this very professional install. I tried to load a picture but was too large a file.

My 79 has a yanmar 2 GMF installed. It was done before I bought it at a local marine yard. Mine has a pedestal installed with the engine controls on it.
I'd like to see pics of how your galley was rebuilt I still have to do mine. The previous owner didn't finish it.

I have a Yanmar as well (no compression), the galley is on the starboard side in an "L" shape, at the engine entrance is my steps and behind them just a wooden panel to access the engine. I'll send photos when I get them...

Ok, so they eliminated the ice chest on yours I assume. I was thinking to go that way as well but I still have the ice chest lid so I would like to try and make a removable section instead.
