I have bought a Hunter Sonata 7 but unfortunatly after a season of use the lifting keel snapped. I have not been able to find anywhere online to aquire a replacement and am struggling with how to go about getting one fabricated. Any information on either purchasing one or on a company with the facilities to replicate one at a fair price would be greatly appreciated

I don't know where to get specs but I did find these two drawings...
It looks like you can get the dimensions of the fixed keel from the second drawing and using the first drawing (and the remains of your existing keel) infer the dimensions of the lifting keel version. You just need to find out how heavy to make it and you have all the data you need to fab a new one.
