How many pencil zincs on Catalina 30?

The maintenance records for the "new to me" 89 (M25xp) indicate that two pencil zincs were installed. EOC (1/4 plug, 3/8x1 3/4) and E1F (3/8 plug, 1/2 x 1 1/4).

I know one goes in the heat exchanger. Which one? Where does the other one go?

There's only one and it goes in the HX.

Which one goes in HX? Any guess where the other one goes? The water heater has one I think but is larger than these.

...just pull the existing H-x zinc out and use it to buy the new one. I've never found one short enough for the installation so it always involves some hack saw work. Bueno suerte.

The heater doesn't have a zinc. Go to Catalina Direct, they sell an anode for the Seaward heaters that replaces the drain valve.
