I used white formica on the original wood. Try to get the cabinet side grade... It's thinner and lighter. If you haven't used laminate before take the plywood panels (be sure to mark which side is exposed) to a cabinet shao and have them mount the formica. You can always file or grind the panels yourself for a perfect fit.
