Which halyard on mast top is head sail and which is spinnaker?

Spinnaker should fly from a block at the top of the mast and forward. The block may not be there, but there should be a cleavis pin on the masthead where you can attach the block. The spinnaker flys in front of the forestay.

David,
Assuming it's a "standard" Catalina masthead, there should be two halyards, and they should be laid out (left/right) back as far as the cleats. If the cleats are labelled, then follow the organization. If not, pick one, and save yourself some guesswork and label the cleats. (Although it's reasonably easy to tell which is which with a headsail hoisted, the bundle of line is a dead giveaway.
