Your Macerator discharge valve is leaking.
My best guess...

Here is why I am guessing this.
1) Macerator discharge valves are below the boat's static water line.
2) If the valve is not sealed, it will slowly flow backwards and slowly fills the Hold Tank.

There is no GREY water tanks on Hunter boats.

There are a few closed inland lakes where it's been illegal to discharge gray water since before there were any federal marine sanitation laws...Lake Winnepesaukee NH and Lake George NY are two of 'em. And there's at least one more in California. Dealers in those places are adding gray water tanks...or, if there's no space for another tank, re-routing sink drains into the black water tank even though that's illegal. I've known a few owners who've had to do that.

My best guess is to check that rainwater is not running in the ventline and filling up the tank. Easy to check. next time you leave the boat tape the vent throughhull with some waterresistant tape.

There should be an O ring under the deck waste cap to seal the tank. Make sure it is still there. It could be leaking deck water right into the tank from the pump out cap.

The vent is on the starboard side of the boat just forward of the forward cabin wall above the TV system. From the outside it is a 3/4 inch vent opening under the seam rail. If it were pointed up there would be no way you could get any noticeable amount of water in the tank even if there was a monsoon. On the other hand you could get plenty of water coming in from the deck fill.

My Hold tank vent cannot get rain or waves, but I wasn't sure about a H41.

There should be an O ring
If the O-Ring is there, you can clean it and put in back in. Very little reason for a Clean O-Ring to leak.

So...
i han no rising in the level
My tank level will not rise if the tank is full, even with a leaking macerator valve.

If I fully open that discharge valve, the water will go no higher than the water line of the boat.;)

Are you sure your hold tank is empty?
