Just on with buying a dual depth/speed sounder/log. I'm have no idea where to drill for a through hull speed log. I've whizzed through the Boat Info with no avail. So may be another one for Dave but I'm sure many must have the answer.

Yep. @Crazy Dave Condon is the man for the job. I suspect he’ll tell you under the rear berth where the fiberglass is solid. Since you’ll be drilling through you might have more options. Just make sure you can keep the core dry after sealing it all back up.

If planning to install thru hull transducers, the only location I recommend is under the Rear Berth to the starboard side of the sump pump. If there is any bottom paint on the outside, scrape off the area that the transducers come in contact with the hull and suggest lightly sanding that area for better adhesion using 5200 in that application
