I normally leave my Hunter in the water (brackish) for 2 years. Other than going under to change the zinc anode at the end of the shaft, is there another way to stop or reduce the deterioation of that zinc and the pittting of the prop?

Hang a piece of any old zinc

You can buy one of those fancy zinc fish or any piece of zinc on the shelf over the side. I buy a rectangular plate of zinc and use a bolt to connect a wire and then hang it over the side with a 1/8" line to take the weight off the wire. Then I connect the wire to my 12V ground somewhere. The fish under my boat are probably unhappy looking at the slab of zinc instead of a designer fish, but who cares. At $10 instead of $35, let them be unhappy.
