Is it possible to display your actual GPS track (as dotted line or whatever) on the plotter as it is being made in realtime? If so, how please? (I'm not good with manuals)

Yes, it is 
And the "cookie crumbs" can be erased whenever you want to. I will have to look it up to let you know. My manuals have been put away for the winter, also.

Track - resets to OFF
Paul/Bradley, yes, I'd spotted the TRACK tab and turned record mode from OFF to FILL or WRAP However, that setting didn't seem to stick. If I then go back to the map page - no crumbs. Back to the TRACK tab - record mode resets itself to OFF. This is all in sim mode btw. Help!
