Fresh water leak in shaft tube bilge

Hey all, we have a Beneteau 361 99 and owner for about 8 years now.

I've noticed over the winter that my shaft tube bilge, that small bilge under the Volvo dripless fitting, is slowly filling with water. It is fresh water and I am on Puget sound so this must be some sort of fresh water leak. Since my fresh water tanks are empty and I haven't run my fresh water it must also come from the outside.

Also I'm thinking since this is in that bilge, which is higher than engine, and pretty much any other bilge, I'm thinking its coming from stern, say swim step, the teak plate or along the stern toe-rail.... Where I suspect the last... the problem will be seeing the lean from the inside, everything is very tiny back there and hard to crawl into.

Any tips on identifying this would be greatly appreciated and before I take everything apart, could one use food coloring from the outside? And how would my boat look after that, how permanent is it and so on...

I sprinkled baby powder around the area under the 1/4 berth and in the stern area. The water running will form rivulets and should be easy to see- even after the ingress has stoped.

Going off topic a bit here but if I do not manage to trace the leak in a clear way with the diesel tank in place, anyone tried to remove it? The benefit of doing that is to take the tank home for a good, it seems when I was back there it just has a big T bolt holding it and removal should be a breeze. Famous last words....
