I have a 2003 hunter 356 and the holding tank system lights up but is not reading correct levels of any the tanks, I saw in the owner manual that the sensors may be dirty, has this been a problem for any one else? If so what has repaired this?

the fuel sensor is the only one that's in the tank and could be dirty - replacing the sensor fixed mine. The water and waste are capacitive sensors on the outside of the tanks. Since they are all misbehaving, it's either a voltage problem or the head's bad. a lot of people had trouble with the snake river gauges - they are out of business
