Filling hole from through-hull fitting

What is the best way to fill a hole created by a redundant through-hull fitting below the waterline ? Should I epoxy mat and cloth on both sides of the hull and fill the hole with epoxy or putty ? or bolt a fibreglass or stainless steel disc on either side and fill the hole with something ? or what ?????? Ideas appreciated. Thanks

Say "hull hole" three times real fast. Anyway, personally, I would take advantage of the setting, and install a secondary depth guage transducer. If a problem occurs on the primary transducer, shifting the cabling over to the secondary would be an option. If reefs are predominant in your area, depth may be a bit more of an important dynamic to monitor. This would give you a bit of additional insurance. Steve! (and how many of you are sitting there saying "hull hole"?)
