I ha e a short manual for my Volvo penta saying that after the winter you should “ bleed” the engine... does anybody know what it is and how to do it ?

Same things that you do when you change fuel filters. For my Perkins I bleed the air out of my primary filter , secondary filter, injector pump then crack the nuts on the injectors until no air bubbles come out. If your engine starts after the winter that will not be needed except when you change filters.
