I had to on our replace ours on our Legend 37. The rudder had a de-laminated bubble of about a foot in diameter (leakage and freezing) with the PO. Rather than repairing it on the boat (I'm not a glass expert) I removed it and took it to Foss Foam in Florida for a new build. I don't know your boat but this is what I did.
Winter haul out a few years back, I arranged for some time (15 to 20 minutes was about all it took )in the sling and had a couple of the workers help. Prior to hauling, I took the deck off that covers the quadrant, removed the cables and loosened it. After prepping it and hauling it, I had the guys put a block under it and removed the cross bolt that holds it from dropping. I had no need to replace any bushings as there was no slop in the rudder post. I removed the bolt and they steadied it while the lift operator raised the boat so the rudder post could slide out of the boat. Easy Peasy.
Install was just a reversal of the removal, in the spring at launch time.
Another way I've seen depends on what type of surface you are parked on. Asphalt wouldn't work very well but if you are on sand or gravel, and have the permission of the yard, dig a hole and let the rudder down into it and put it back the same way.
You will most likely need help either way but a few beverages us usually all it costs.
Good luck with either venture.
