IF you are going to do this you MUST have pressure regulator to reduce the shore water pressure to a much lower pressure that you boatside piping can safely handle. Even then, if an interior pipe fails you could flood the boat. If it were me and I had to have this, I'd have a shutoff valve AND shut off the shore water supply whenever I was off the boat. When a pipe fails in your house, you have a mess but you don't sink your house.

Pro/con arguments aside, virtually every boat, both power and sail, at our marina (excluding the small ones) has a dock water connection.
In answer to the question, check out the diagrams on the internet such as below paying attention to the pressure reducer one-way valve (at the point of connection to the boat) and water shutoff on shore when the boat is unattended. IMG_2629.png

You should not need a valve to select between shore water and tank water if done properly.

So it better to flush out tank an fill up the 100 gal holding tank
an flip on the small pump to fill the lines to the valves an pressurize the water
when needed ???

Only you can decide what is "better." If you are living on the boat then a shore hookup is nice but it comes with risks, which may be acceptable to you.
As far as filling the fresh water tanks and turning on the pump only when needed, that is fine. You can even leave the pump on providing you have no known leaks since the most water you can introduce into the boat is 100 gal and it will end up in the bilge, plus your boat is already floating with the 100 gal in the tank so it isn't really introducing water into the boat, just changing its location. I always turn off the fresh water pump AND close all my thru hull valve when I leave the boat.
