How many pounds will you add to the gross weight of your Catalina 310 WK ready to go cruising for 4 days with 4 people?
I'm not sure if the gross weight listed in the Catalina specs includes water and fuel.

Design literature usually includes the weight of the engine, fittings, furniture, full fuel and water, rigging, sails, etc so the boat will sit on her lines when normally loaded. She would certainly be less than 6 tons for your cruise.

When selecting an autopilot drive unit for a mechanical steering system, the vessel displacement is the determining factor for selecting the properly sized drive. When determining your vessel displacement always add 20% to the dry weight of your vessel to account for the added weight of fuel, gear provisions and people.
