I am planning a long distance ocean race (500+ nm) and am intersted in input regarding watch systems. Boat is Legend 37, crew of six (including skipper).

2 crews of 3 or 3 crews of 2 ?

Hi Del, When I did the Marion, MA to Bermuda race in 87, we had 2 crews of 2 men. We set it up with watches of 3, 4, and 5 hours so that no crew got the graveyard shift all the time. Your set-up will depend on how many crews you decide to go with. I have attached an interesting article from SailNet. Let me know how many crews and I'll think it over and play with possibilities during the drive to Cocoa Beach and call you with the results.

If I recall correctly on our OPO sail we had a crew of six. Each "pair" (crew of two) took three hour shifts at the helm. If needed , the crew coming off watch helped out with meal prep and navigation before they retired completely.
