Have some winter projects for my Hunter 27 and one of them is the countertop.
My question: What kind of plywood would you recommend?

That would be marine plywood.

Don't know what condition yours is in, but I saw this a while ago, maybe of interest to you.

MDO or HDO plywood would also work well for making a countertop.... it depends on what is available and most affordable in your area...
