Counter Replacement

I own an '86 Cat 27. The galley plastic laminate countertop plywood has dry rot between the sink and Teak "wall", which also has dry rot. The galley lay is port side 'L'shape model. I want to replace the counter this spring before launching. Has anyone ever done this before? And if so, helpful hints? My concern is the 'template' of the countertop shape. I assume I will pretty much destroy it when removing the old. What about soild surface material (Corian) like they show on the new Cats. There is also a teak edge. I am very handy and want to do this myself. Would Catalina have the 'template'. Thanks in advance!!

I wanted to do the same thing mainly to get rid of the butcher block 80s look and go with white formica instead. Unfortunately what I found was that the thickness of the counter tops differ greatly from the thickness of kitchen counter tops. I could not find a formica top anywhere that was the right thickness. If you find a solution please let me know at r_clack@hotmail.com. I think the template will be the least of your problems.
