I am replacing my coaming trim with the plastic ones from Catalina direct on my 1984 Catalina 27. What should I use to attach them ? Also any thoughts on surface prep?

Dow 795 would be a good choice, it is flexible and has good adhesive strength, yet can be easily removed if necessary.
Many port lights were attached/sealed with silicone.
Nothing the residue touches afterwards will ever stick/seal again.
Make sure the mount area is cleaned with acetone, then sanded, then cleaned
with acetone again. Use alcohol for a final cleaning.
Then, lightly sand the trim ring and clean with acetone.
Mask off the area outside of the footprint of the ring.
Then, apply Dow 795 to the ring or the cabin top.
Use clamps to hold the ring in place for 24 hours if possible.
Remove tape asap after curing.
Hose down the area to check for leaking.
