I just bought a 1990 Beneteau 35s5. It came with a gps but it's outdated. Does anyone know what models of chart plotter would be compatible with the plug I have shown? Lookin to buy a new or used one. I don't have the money right now to do any wiring.
Any help would be greatly appreciated.

Most new CP are self contained and only need power, that is they have built in GPS. Now you have to pick the screen size and make, B&G, Raymarine, Garmin, take a look at Garmin EchoMap series.

A new Chart plotter will bring its own plug. Just splice the power and ground wires. Waterproofing the splice is recommended. Latter on when you desire communication to other instruments you can use other connector wires. For GPS all you need is 12V power.

Sounds like an easy job. how do you know which wire is ground and power.I may purchase a used unit. Do you know approximately when chart plotters went with this change?

Try to find the other end of that cable where it comes out, likely under the cockpit floor. From there you can trace it back to the power source and see which wires are connected there. You could also try taking the end off the existing wire and using it to fish new power wires, if the existing wire isn’t bundled or zip tied someplace inaccessible.

That will vary based on make and model. Look for something with an integral GPS. There was also a GPS epoch rollover last year (think Y2K for GPS) that affected some older GPS’s. They should still report position correctly but some things like time and date may be wrong. If the device was built with the epoch in mind, or if the vendor provided a software fix, then it should be fine, but it’s something to be aware of. See, for example, Furuno GPS Rollover Issues Expected

That looks like an NMEA 0183 data cable. The corrosion around the terminals suggests it is pretty old and may no longer work.

Integral GPS started to show up about 10 years ago. The technology behind the NMEA 0183 standard is now about 40 or 50 years old. NMEA 2000 is 20 years old. If you are shopping for a new used chartplotter it would be best to look for a model that has NMEA 2000. Another issue may be chart compatibility. Chart companies, Navionics and C-Map may not support older chart plotters.

Finally, screens on older units are often the first part to fail. That pretty much kills the chart plotter.
