I saw a 31' with a center board, 2'7" draft CB up, and 6' draft CB down. I would prefer to have a shallow water boat for docking purposes. However, a 6' depth is out of the question where I sail. So, I would like to do some blue water sailing and some bay sailing but I am apprehensive that the boat will not sail right unless the CB is all the way down. Comments?

Centerboars/Lifting keel
I have a 323 with a lifting keel. Its the same general arrangement. It actually tracks and sails quite well with the keel up, and is not all that noticeably more tender. I assume it does have more sideslip, but nothing unmanageable.
