Catalina 22 sliding galley question

Hi everyone, first off, this forum has been so helpful! Thank you all for your help! Here are my questions.

I just got a "new to me" sliding galley. I am re-working it. I would like to replace the water tank. Any suggestions on a replacement that would work well? Or, if I were to keep the old one, any suggestions on how to clean it?

Also, it is illegal for me to drain gray water into the lake where I am sailing. Any suggestions for a gray water tank or bladder? I am looking for something around 5 gallons.

As far as a holding tank, it should be pretty easy to fit a soft side water bladder or even a small hard side tank in the compartment under the companionway step. Run the hose from the galley drain to a fitting on the bladder that is easily disconnected, then simply lift the tank out and carry away to empty.
