Would appreciate any help in identifying the core and construction of the rudder.

Welcome to the forum. According to the C&C owner's manual, the rudder on the C&C 29 mark II has a (solid) stainless steel post with a mild steel plate welded to it. There is a foam core surrounded by a (two piece) fiberglass shell. Pretty standard construction details. Do you have a problem with your rudder? What specific information are you looking for? I've got the same boat and know it intimately.
