i was given the secret to yellow chicken--LOL--is a vat of flavorings the market buys --20 pounds for 90 dollars--awesome stuff..pollo asado-- and from a company with baja dealings.. i will learn more--i love being a valued customer.... is fun,educational also--now of i can find out exactly.....

ok got the galley maid stove out of the well and up into cockpit-- whew- that was a lot of work--- did it all my self--- those are heavy!! is a 3 burner-- the 3 burner force 10 i have in my ericson goes in here asap-- so i can continue to cook and feed neighbors...LOL-- more recipes will come as i can bake and broil with this--this was all spozed to have been done today so i can still cookand feed neighbors who love morning coffee-- i guess we wont be having that until i get my force 10 in here! was spozed to have been today-----when neighbors get hungry, the job will be done, i guess--- now to remove sharpcorners from my sheet metal i am installing in thewell to prevent wood from scorching and torching.....

spanish rice--one way to make- are many ..
olive oil in pan, add 1 cup rice and onion and garlic and brown
one cube chipotle from knorr
goya sasonada cilantro y tomate X4 packets
salsa to taste-i use herdez salsa casera.
simmer covered until rice is cooked.
yummm

force 10 is in well and on gimballs-- waiting for propane installation....

ross-- that cypress looks great-- i have pix of it -- we didnt install the windlass yet so i didnt post pix, but i will soon a s the windlass is re-installed.. i awesome.... puuurrty!!!!

red sauce for pasta....
2 cans diced tomatoes
oregano
italian herb mixture--italian seasonings?
small dollop mustard--french's yellow works best
tsp cider vinegar
onion
garlic cloves-more is better
bayleaf
olive oil

brown meat(optional) and onion and garlic and herbs with bayleaf, i used diced dried mushrooms, bell pepper is good, red bell pepper is awesome, in pan and add tomatoes. mix well together, add mustard and vinegar and simmer forever.
works with any pastas...serve with your favorite shredded or grated cheese stuff. i usually use kraft 3 or 4 cheese , shredded.
ground beef is wet and takes a bit of time to really get browned, ground turkey likes olive oil for frying with the herbs onion and garlic, clamslike it but with a lil more liquidy quality- i add the clam juice .. i want to try it with mixed conch, clams, shrimp, etc.
would like to grow the tomatoes to make this from scratch...i was just given 2 plants from a friend,i dont know if they are yellow tomatoes or roma--if i dont killem off, i will keep ye posted as to their survival and life at sea.....

dang!! no one is eating any more???/ i guess it takes a terrific pnw to san diego storm to get new stuff to cook...... the winds are howling... seas are only 2-3 ft, but we usually dont have any at all--is inside a bay. so i made eggie salad for lunch --ate with a brave neighbor.
on french /italian bread or hoagie rolls.
i use 4-6 eggs, place into cold water and cook on low heat for 15 min.
shell and place into bowl. chop . add chopped green olives, chopped ripe olives, chopped onion
spicy mustard
helmans/best foods mayo
mortons nature seasonngs
mince celery
herdez salsa casera(2 tbsp or so)
garlic, granulated
mix together in a bowl. add to sammich in bread
eat-- is goood.....lol......
is also good used as a dip for chips.... multi purpose, so is good on a boat..LOL

been jonesin' for some realllly good shrimp----

so i went to the fish mercado in ensenada and bought a media kilo of camarones, medio sized. i also bought 3 fish tacos for 2 dollars , para llevar......
i took the pico de gallo from the fishie tacos--lol--is made of tomatoes, onions, cilantro, and lime juice-- sometimes has serrano chiles diced or minced into it----
i diced some yellow onion, sauteed in butter with minced garlic until transparent, added oregano and the pozole seasoning i used for pozole, about a tbsp, crushed it into the saute pan, added water and some caldo de camarron cubes--i used 2 -- by knorr...let that cook a bit-- added the half kilo ( 1.1 pounds) and let simmer for about 5-10 min on very low setting on my force 10 stove, or until those shrimpies are opaque. then i added the shredded cabbage from the fish tacos, and ta daaaah!!!! awesome shrimp soup---as good as gulf of mexico shrimp and as good as using crab boil--mebbe better, even!!!!! is awesome!!


by the way--i KNOW i aint tho solo chef-ette out here-- what ye all doing besides painting boats-- gotta be some good paint soup recipes..LOL

received some free albacore from a tuna boat last night----was the tail and had been munched in the cleaning process-- but there were many goood pieces for cooking --- i had an idea--i found some coconut milk- fairly thick--thai type, and was gifted many mangoes---there are tres here with those on... and decided to see what happens to albacore when ye cook it in sauces--lol
i took one can coconut milk
3-4 med to small mangos
equivalent of 1 small white onion
2 garlic cloves
a few slices of dried serrano chile
and a pound and half of fresh albacore
i made a sauce of everything except the fish and cooked it until the flavors blended
then i added the albacore and let it to cook for about 5 mins--until the fish was cooked thru, barely
serve on rice---
make rice using the sauce-- yummmmmmmm
surprised meself!!!! dang was gooooooood.. will serve about 4 -6 people.
instead of albacore, any shellfish will work.
substitute peanut butter---about 2 tsp- for mangos.. get a completely differnt flavor..lol
gotta love seafoods and fruits... they go nicely together-- this is also a good chicken base.
i discovered magic!!!!

cooking With TWIST....

before i pan fry pork chops, fish, chicken, i first burn some serrano chiles, onion and garlic in the pan. remove those and add the meat and pan fry as usual--- gives the meat a slight tang --is delishus and easy. the cooked veggie items are good as garnishment for the meat and serve with rice or taters and veggies of choice.

The last time I had rabbit was in Oregon in 1962 or '63 when i hit a big jack rabbit in a snow storm on my way to work.i stopped and pick it up and dressed it out. It weighed a bit over five pounds. i hung it out side and it conveniently froze. In the morning I took it home and stewed it like I would with an old hen. It was quite good as I recall. very lean and a bit tough but in those days my teeth were good.

secret held by mexicans for reallly GOOOOD carne asada---isnt in the spices. you can use whatever of those you like., but when you add coffee liqueur, you get CARNE ASADA!!!!!!
just add to the marinade you usually use to make grilled beef while marinating---- WOW awesome. doesnt even take much ....
