The fuel gauge on my 1981 H 30 seems to work but it bounces back and forth when ever the power is on. It seems to read the correct fuel level before each bounce. It doesn't matter what other circuits or items are turned on.

Any suggestions out there?

Diagnosing this sort of problem with much relevant info missing is difficult. However, in general my first thought would be a faulty electrical connection somewhere. Fuel gauges are extremely sensitive to high resistance. I would look first at the connections on the tank unit. Put an ohm meter across the sender to check for a steady resistance. If it remains constant the problem is in the wiring/connections to the gauge.

Alan is exactly correct.. a bad connection anywhere in the simple fuel gauge system will do that .. but the most unreliable one is the connection of the wiper (connected to the float inside the tank) to the resistor in the sending unit itself.. The good news is that senders are cheap and pretty easy to find. Good luck!
