Is there an easy way to overlay boat data such as boat speed, wind speed & direction etc. on a GoPro video? How would that accomplished?

Later model GoPros record GPS data along with the video. Dig around in the GoPro manual and website. As I recall it is pretty easy to do, once you know how to do it.
For windspeed and speed through the water take an occasional shot of the instruments or buy another GoPro and have it record the instruments.

Overlay is a combination of having a video (obviously), location/speed metadata source, and an app that can use it.
The most straightforward is using a video device that also generates the metadata (gopro >6 etc) and then their app that overlays it. Thats about as easy as it comes. You can also use Garmin's video app to do it; if you use ANY garmin device along with a video source.
