So I found these deposits on my universal 25MXP. Are these salt deposits? Is this something common in salt water boats?

Yes. It happens when salt water gets on your hot engine. It is corrosive and should be removed. The rust that is or will be forming- treated.

That blue paint is a good tool to help keep the splash marine water off the bare metal.

Give your engine a little love. Clean her up and she will keep working.

While prompt cleaning is necessary you need to find out where the salt water is coming from, is there a leak in the raw water cooling system or is salt water spray leaking into your engine bay? Depending on how long it took to accumulate that amount of salt it will be an indication of the amount of salt water intrusion.

Yes, salt spray did come in through the prop shaft. That’s another issue I have to address.

Could be from a non-dectable, pin hole heak in the water pump, which is what happened to my boat and solved by water pump replacement, or engine exhaust circuit.

Yes, a spinning shaft will spray water all over the place. Tighten or replace the packing in the gland.

Your heat exchanger is right behind the area with the salt deposits. Make sure their are no leaks in that.
