I would like to add winches to the winch pads on my 280 so I can bring the jib sheets back to the helm. It looks like I would need to add fairleads and blocks in order to direct the sheets to the winch. Has anyone with a 280 done this.

I've added a deck organizer and a traveler to an H26. I can post pics of the process if you think it would be helpful.
Fairleads can be tapped directly into the embedded aluminum plate in the deck pads... tap and dye sort of thing.... the winch has to hold a much larger load and you should probably through bolt that with a substantial backing plate.
