It would be best to start with a properly insulated refrigeration box and convert the boat's cooler to dry storage.

I spent a lot of time in that space you have the tank running cables and hoses. In theory you can reach around and put insulation on the box thru there.

Benny has it right, we have a 5 day cooler with wheels, really keeps the ice. Ice box is dry storage.

You can do a search on this subject as it has been brought up many times on the Catalina forum. I see the problem as trying to insulate the entire box on all sides. Some have used expanding foam others insulating sheets; as its an issue of access to all sides. If you remove the drawer unit (four screws and the frame and drawers come out), you have access to the rear and side. From my perspective that's about the best you can do to get insulation installed. I am not sure how much hollow space (if any) is in that common wall with the stove/oven as you pictured. If this is indeed hollow, an expanding foam would do well here. The cooler has always been well below par for maintaining temperature. However, any amount of insulation has to be an improvement. Good luck.
