The helm seat has collected so much water that it is heavy enough to start crack the firberglsss at the weakest points where it lowers down onto the swim platform. I’ve made a couple attempt at drilling discreet weep holes but I hit interior plywood and no signs water yet there is plenty sloshing around.
has anyone had/dealt with this issue?

Can you identify the entrance point? A picture would help.
I’ve just recently purchased this boat in December. In trying to identify the source of water incursion I noticed a small hole in the center of the step (seat bottom lowered) and thought that was factory and might be the source.
There are also some structural cracks/splitting taking place on the sides which could also be contributing but are more likely but to the added weight of the water over time.

I imagine that poking into the hole gets you to the plywood that you mention. IMHO I don't think the hole is factory. More likely the PO drilled this hole in an attempt to remove the water.
I'm not going to be much help. I have had water intrusion in a cover panel and my source was fastening screws. I had saturated wood core but no sloshing of liquid. But my cover was solid with no interior spaces for liquid to accumulate. I thought yo might have a similar problem but yours is quite different.
I will say that my ultimate solution was to open up the bottom of my cover and remove all of the saturated core. I then replaced the core with structural foam and fiber-glassed the bottom of the cover to seal it.
