What is the recommended way to replace the cabin sole on a 2001 Catalina 36 mkII?

Kind of a generic question. Is there something specific to your model boat that requires some unique method?

Or are you looking for sources of teak and holly?

I would start by learning if your sole is made of real boards or a veneer adhered to plywood, or some other material. I think the method would be different for each. OP should also know what the result should be. Does he want the same thing or something better?

It is a teak and holly veneer on thin board. Max 1/4 inch. Just want to replace with same. Catalina doesn’t seem to offer it. If I can’t get precut replacement pieces, then I need a source for the veneer so I can cut it. Thanks.

It was 3/8" teak and holly veneer on my boat, I went to the original supplier who advised me that they made "trim to fit" for the factory to account for differences in individual boats. If I brought my old ones in they could make them "exact fit", unfortunately when I did return the owne flooringr had passed away the night before and business closed.
I ordered a sheet of the teak and holly at > $350 and while waiting for it's arrival I made up some temporary ones using 3/8" engineered oak flooring. It's been a decade and I'm still using the temporary boards which are showing no wear and the $350 plywood is in storage.

Catalina 36 mkII Venice
Two years ago I tackled this project on my 1999 Catalina 36 MkII. My current sole panels were still intact so I was able to use them as templates. I purchased 3/8 marine ply with T&H veneer from PanelWorld. It took 2 @ 4x8ft sheets laid out carefully to just fit all pieces. Used both a skill saw and saber saw for the cuts. Then used Total Boat sealer (3 coats, especially heavy on edges) & Total Boat Varnish (amber color) rolled on with small foam roller. This product dries quickly, 15 minutes, so easy to put on multiple coats fast. Lighted sanded every third coat. Lint cloth before each coat. Believe I put on 10 coats. This product also has very low VOC so almost no smell so I was able to work inside with very little dust. (Note - the sealer stinks, so work with this one in a well ventilated area). Due to the templates, panels came out perfect, even the screw holes matched up, so the install was quick. Came out beautiful as seen in the attached picture.
