Probably not a good idea as the extension will increase the bending moment on your bow roller.
I had the same problem when I switched from my old Danforth to a claw type anchor. Installed a plate under the bow roller to deflect the anchor when being deployed.
Nothing quite so fancy. The material is 316L - 2-1/2" wide X 1/8" thick. The top is hot bent over as shown hence the L in the 316 to avoid corrosion down the road. Bend to match the angle of your bow. Still shiny after five years. This photo may show it with a little more detail.
The real work was hand sanding down to #1500 grit and then polishing. It is attached under the existing bow roller with 1/8" machine screws.
