Can't help with local shops. I used a local (Chicago) Marine & Auto Upholstery Shop. Went with a premium nauga-vinyl type material for ease of maintenance. Plastic zippers and a breathable underside fabric are important. Lighter color upholstery is a good call, especially if you have a lot of wood, and it will look more up to date. I have white bulkheads, so went with what I would say is a medium shade of taupe. Did this when I bought the boat ten years ago and it still looks good. Before and after photos attached.

The stain resistance of Sunbrella type fabrics is as good almost ( it is plastic fibers after all, with solid color all the way thru, a lot of colors and patterns) as good as Vinyl. I prefer it over the vinyl and faux leather and does not stretch out of shape, get wrinkles as easy... But thats just my observation.... A few years ago, you could not get Upholstery Sunbrella, now its fit for your living room.

I did mine three years ago on my h34 and used a local upholstery shop.
They used some kind of foam that if it gets wet it does not retain or absorb water. I don't know what it is called however they said it is used in the outdoor furniture industry. The upholstery shop was half the cost of the the marine companies, go figure. I did all the cabin and cockpit cushions along with about a dozen small pillows for about $2200
