I'm testing out the new Horizon True DAL1000 self-leveling camera mount. Its not a fluid as the $400 P500 unit I also have, but is way less than 1/2 the price. That said, most the the 'jerk' in this video is coming from my VHF wand moving in its mount. Its very lightweight. The dampening part in in the hinge box. It comes with all sorts of mounting hardware, but I taped it to my VHF antenna.

Here is a sample of some tack and ducks from a race last night.

That is pretty smooth. Doesn't Go-Pro also have a self-leveling mount?

Catalina 270 255 Wabamun. Welcome to the marina
Another angle is something like the Tarot 3 axis drone mount, they can be had from places like foxtechfpv and they're about 100 bucks. Battery isn't built in, and mounts need to be adapted, (tape works too)
The Tarot one is adaptable to the GoPro "chip clip" mount easily, and way, way less money and lighter than the camera store options.

Obviously, waterproof is one of the biggest features I look for. That things out in all conditions
