Although, in order to have a "bill of sale" there must be some form of "consideration" - like $1 - to make it legal.

I had about 200 text messages

When posting on Craigslist, I always make sure to uncheck the "reply by anonymous email" and insist that the respondents call, rather than text.
It seems to help weed out the flakes.
