Stage two of the shop complete: Insulated and the interior sided. Now to figure out all the utilities, which will start in the spring.

And I'm continuing to refine the boat layout:
The upper pic below shows the arrangement with an "emergency" third bunk in the forepeak. The seatback cushions form about half the cushion while some type IV or cockpit cushions would have to make up the balance. The table supports the head end (aft).
The lower pic shows the counter tops extended to allow access under them. I liked the idea of the countertop mounted on full extension stainless drawer slides, so I drew the nav desk mounted the same way. A pull-pin locks the countertop in several positions. The galley countertop to port is actually a sort of basin so that anything spilled doesn't make a mess in the storage below. I've also added small drawers that mount to the bottom of the sliding countertops for stuff like silverware and spices on the port side, and book/chart storage on the stbd side.
It also shows the table being used in the cockpit (either as a table or as the footwell filler for sleeping in the cockpit).

The upper pic below shows the table in place.
The lower pic shows the table lowered to form a filler between the bunks, with the seatbacks as filler cushions. As it worked out, the table fills 5 functions: cockpit table, cockpit footwell filler, cabin table, settee filler, and "emergency" berth filler in the bow for a third person to sleep.

This pic below shows the galley to port (trash can is the thing in the countertop aft), a navigation station to stbd, two settee berths (transom berths), head at the foot on center, four AGM batteries (red rectangles) surrounding the head, clothing stowage outboard at the head, anchor rode stowage ahead of the fwd batteries, and sail locker in the space above between the blue and purple bulkheads. Dickinson P-9000 propane fireplace mounted on the aft side of the mast.

That shop is looking just great Tod! Sure will make working on the boat easier. Plans for that look great too!

sounds great, and much like what I did with Tehani.

Removed and glassed over ALL through hulls. Moved deck drains above waterline and added valves. My sink is a lift out also. In fact it's a stainless steam table pan

Tehani was built with single lowers. I considered going to double, but discussed with Bryan Toss. He asked me how long the boat had had singles and I said since 1961- I stayed with singles, BUT I did move the chainplates to the side of the hull which gave me a totally un obstructed side deck AND no deck penetrations

I almost followed your idea with the restaurant pan for a sink and I may yet (it is drawn with one in the pencil drawing earlier, and you are the source for the idea), but with the sliding top I thought I would try a rubbermaid dish stored below.

I also copied some of James Baldwin's thinking regarding watertight subdivision. As the boat was constructed, there were none at all, it is one open space.

An 8' kayak fits into the cabin and back under the cockpit out of the way, as does a 6' fliptail dinghy, so no need to tow or stow on deck for longer days.
