Vaning head to wind

Does anyone have input on the best way to vane head to wind when raising/lowering mainsail, reefing, and following capsize recovery to prevent the boat from running away? My H170 doesn't stay pointed into the wind very long and even using bungees to center the rudder it wants to fall off rapidly. Any ideeas would be greatly appreciated!

When I rig a 170 I raise the sail while it is at the shore and lower it at the beach or dock too. For reefing I just head about 45 degrees off and reef. If you are alone in such a small boat it may just be easier to sail to the beach and reef.
