Hi, I'm looking to mount an anchor holder/roller on my 1992 hunter 28. I'd prefer to have it out of the locker for easy access. Has anyone done this?

I assume you mean that you want to have the anchor on deck ready to deploy as opposed to in the locker.
If I am right, Yes, many of us have done just that. I had to change the roller mount when I changed from a CQR to a Mantus new gen anchor. So you must match your anchor to an appropriate roller.
I still have the original roller and it's availablefor $40.00 plus shipping.

1. Locate roller on deck so that anchor won't hit hull or deck fittings. Do this a second time to be sure (not kidding).
2. Mark holes in roller onto the deck.
3 Drill marked holes.
4. Seal hole edges and sides in deck with 2 part epoxy to prevent water intrusion/delamination. Let cure 24 hours.
Go have a beer.
5. Put down a bed of caulk or butyl tape around deck holes to seal once bolts are inserted.
6. Put roller in position and bolt to the deck using oversized fender washers under the deck.
7. Install anchor and insert clevis pin or lashing of your choice.
Have a beer or go sailing.
